Pacific Northwest Alfalfa honey is produced from the purple blossoms, and has a mild flavor and aroma similar to beeswax. Like the alfalfa blossoms, alfalfa honey is "delicate". Not as sweet as most honey, alfalfa honey is white or extra-light amber and has low moisture content. It is considered a great table honey and is often blended with other honey varieties.
